Shhh… 2021

A blend of secret Mediterranean grapes. The different grape varieties were vinified separately, with cold fermentation at a controlled temperature to extract all the aromas and respect the potential of each variety. They then remained in stainless steel tanks for 3 months before bottling.

Pale golden yellow. The initial aroma evokes citrus fruits like lemon and grapefruit, followed by notes of orange blossom, a touch of herbs, very subtle honey, and an elegant mineral background. On the palate, it is very pleasant and elegant, with a well-balanced acidity that invites another sip. Notes of orange blossom and orange emerge, along with lemon, a hint of fennel, and sweet touches like honey. It pairs well with oily fish, pasta, and young meats. It also makes a good aperitif before a meal with cheeses and foie gras.
