Viticulture and production
This wine is made from local grape varieties, some of which are currently being revived. The aim is to capture the freshness of the Mediterranean through dry-farmed vineyards cultivated with the utmost respect. The winemaking process begins in the vineyard, selecting the grapes least sun-dried and therefore freshest. This results in complex aromatic profiles, with citrus and fruity varietal notes predominating, while avoiding overly perfumed aromas. Fermentation takes place in small stainless steel tanks with minimal intervention and is carried out using native yeasts.

Tasting and pairing
A clean, straw-yellow color, aromatically complex with delicate, fragrant aromas of citrus, fennel, grapefruit, and boxwood. On the palate, it is an elegant and refined wine, with good body and a long finish. The saline flavor and high acidity are noteworthy, reminiscent of the vineyards' proximity to the sea and its sea breeze.
