For our Pensando en Ti, we use only the heart of the pressed grapes to craft this limited edition of Garnacha, produced in two 500-liter barrels. It ferments at a low temperature (12-14°C) to preserve the primary aromas. Aged for 11 months on its lees in these same 500-liter French oak barrels, it undergoes two bâtonnages per week for the first three months, one bâtonnage per week for the next six months, and one bâtonnage per month for the final two months.

Pale, bright, grayish-yellow in color. Subtle and complex aromas. From fresh herbs and white flowers, through aromas of fresh grapes, peach, citrus, and a touch of honey, where the spices from the barrel are not only integrated but also subtly woven into this myriad of aromas. An ethereal and unforgettable fragrance. On the palate, aging on the lees adds volume, but without being excessive, preserving the varietal character of the Garnacha. Its high acidity balances this volume well, resulting in a longer and fresher wine. Pairs well with seafood, rice dishes with lobster, baked or sauced fish, white meats, and sushi.
