Viticulture and production
Fermentation begins with native yeasts from a starter culture 5 days prior to harvest and is maintained at a controlled temperature of 14°C in stainless steel tanks. After a 36-hour maceration, fermentation resumes with native yeasts. This is maintained at a controlled temperature of 15°C in stainless steel tanks. After three rackings, the wine is bottled with light filtration and a low sulfite level.

Tasting and pairing
Visually, it's a bright, pale straw yellow with the typical green highlights of Muscat, and on the nose, it's a Muscat bursting with fresh floral aromas of jasmine and rose. On the palate, the age of the vines is very evident; it's a complex, food-friendly wine, full-bodied and long, with citrus notes of lemongrass and a distinctly herbal flavor.

Additional information
From the 70-year-old Muscat vines in the stoniest plot of Les Freses, the one belonging to "Mother Calixto," we obtain a few clusters that allow us to appreciate the enormous varietal richness of Muscat. In gratitude for the work of our ancestors, we wanted to make this wine only from these old vines. It may have sediment, is gently filtered, and has a low sulfite level. 100% Muscat of Alexandria (different clones, rootstocks, and sub-varieties) planted in the traditional bush vine system.
