Viticulture and production
Fermentation begins with indigenous yeasts in small stainless steel tanks. The grapes are destemmed, but the skins are left intact to preserve the whole berries and enhance the primary aromas. This is combined with ten percent rapeseed, which lends the wine freshness and character. The wine is then aged for 12 months in 500L French Allier oak barrels and for one year in the bottle before release.

Tasting and pairing
Bright cherry-red color, medium-low intensity. Great aromatic potential where the wine's delicacy stands out. We find expressions of undergrowth, flowers, and plenty of fresh red fruit. A subtle and balanced wine. Round and gentle tannins with good acidity. The result is a fruity, very luscious, and elegant red wine. With a marked personality and wild herbaceous touches that make it unique and special. The oak complements the wine, simply adding length and elegant depth. These are subtle and elegant wines that require dishes that don't compete in terms of intensity. This grape produces wines with which to blend subtle aromas, where spices don't stand out. It pairs well with mushroom dishes, creamy sauces, soft cheeses, duck, partridge, white fish such as turbot, or suckling lamb.

Additional information
Xaló village wine. Production begins with the selection of grape bunches from different plots located around the village, all dry-farmed and trained in the traditional bush vine system, some over 45 years old. Each selected plot is chosen for its unique and exceptional characteristics, such as sun or shade exposure, different soils, and altitudes. Therefore, depending on the vintage, a different percentage of grapes from each plot is selected to create a unique wine. Serving temperature: 16-17ºC
