Viticulture and production
Cold maceration for 48 hours followed by slow, natural fermentation using the yeasts present on the grape skins. Racking and pressing after three weeks, the wine remains on its fine lees for eleven months until malolactic fermentation is complete. Light filtration prior to bottling in July 2023.

Tasting and pairing
In the glass, it displays a medium-high intensity, with violet hues that denote its youth. The nose is dominated by violets and undergrowth. On the palate, it is smooth and fresh, with soft tannins. A long finish of rosemary and thyme leaves you wanting more.

Clay-limestone soil, predominantly clay with abundant pebbles. Average age: 30 years. Hand-harvested in 15 kg crates and sorted in the vineyard and winery. Cold winter, with above-average rainfall, some of it snowing. Mild spring with high rainfall. Hot and dry summer, with significant temperature variations between day and night.
