Tasting and pairing
Mahogany in color, with amber and slightly coppery tones, transparent and bright. Its glyceric layer forms fine, narrow tears that develop slowly. On the first impression, the aromas are airy, slightly sharp, but of high quality, with stone fruit reminiscent of plum, ripe apricot, and candied orange peel. In this primary aromatic phase, it is reminiscent of a highly prized aged plum brandy in France called Vieille Prune. In the second, still phase, denser layers emerge with delicate aromas of vanilla, cedar, and tobacco, more akin to a Fine de Bourgogne or a delicate Cognac without excessive aging. The first impression is of a highly pure spirit with a fiery, fruity aroma, confirming the nose, yet protected by a fine and delicate structure. It possesses enough density to rival a good Cognac from the Borderies region, which tend to be somewhat fruitier and more floral than those from Grande Champagne, which are typically more full-bodied and better suited for longer aging. Its pleasant finish, silky texture, refinement, and narrow but profound length on the palate will leave a lasting, celebratory after-dinner memory. Very fine and delicate, with a highly diverse aromatic profile, it builds a spectacular, light, and remarkably pure palate.
