Viticulture and production
Organic. Each variety is harvested separately. Fermentation takes place in a 10,000 L truncated conical concrete tank. Pre-maceration is carried out at 3-4°C for 24 hours in a cold room. Maceration lasts approximately 18-21 days. Pump-overs are performed twice daily until the wine reaches a density of 1020, at which point aeration is reduced. Three rackings are carried out between densities of 1070-1040. Alcoholic fermentation is carried out using indigenous yeasts. The temperature is controlled below 25°C. Approximately 14 months of aging are in French oak barrels from Alliers (first, second, and third year). Volumes are 225 and 300 liters.

Tasting and pairing
Deep cherry red with a ruby rim. Medium-high intensity. Generous tears. Complex aromas, an intense and elegant nose, aromas of red fruit with toasted and balsamic notes. Subtle mineral touch. Smooth and round attack. Polished tannins. Broad palate with balanced acidity that enhances its silky texture. Long and persistent finish.
