  • Viticulture and production

    The production of Fondillón begins with the selection of Monastrell grapes, which are left to overripen on the vine, thus concentrating their natural sugars. After harvesting, the grapes are fermented without the addition of alcohol, reaching a natural alcohol content of between 16 and 18 percent. This process results in a semi-sweet dry wine with a unique aromatic and flavor profile. Fondillón is aged using the traditional criaderas and soleras system in 400- and 225-liter oak barrels. The main solera at Bodega Las Virtudes dates back to 1972, and each bottle contains a blend of wines from different years that have aged together for at least ten years. This method ensures consistent quality and exceptional organoleptic complexity in every batch.

    Beautiful amber in color with mahogany and coppery tones. On the nose it offers aromas with
    Toasted notes reminiscent of nuts, figs, prunes, and coffee.
    The mouth is both dry and smooth while also warm, leaving a lingering aftertaste
    extensive trail of fine woods.

  • Additional information

    Villena, located in the Alto Vinalopó region, has a continental climate with a clear Mediterranean influence and little rainfall. Winters are cold and summers are warm, although its altitude of 526 meters moderates the nights during the hottest months.
