Viticulture and production
Organic. Skin maceration at low temperature for 4 hours. Free-run juice is drawn off from the tank. Static settling by cold settling. Alcoholic fermentation in stainless steel tanks. Between 14 and 15°C. Aging: 15% - 20% aged for 2 months in second-year 225-liter French oak barrels, with two weekly lees stirrings. A blend of Chardonnay and Macabeo provides the base wine.
Cava at less than 11.5°C. Minimum aging on the lees for 21 months. Disgorged without added sugar, resulting in a sugar-free Brut Nature cava. -
Tasting and pairing
Straw yellow with golden highlights, clean and bright. Fine, well-integrated, and persistent bubbles. Aromas of flowers and ripe white fruit. Subtle aromas of smoke, minerals, and nuts. Fresh and full-bodied. Good structure, smooth mouthfeel, and great creaminess; fine, well-integrated bubbles. Balanced, persistent, and elegant acidity.

Vineyard at altitude (750-840m). Between 2-4 kg per plant. Night harvest and mechanized.
