Viticulture and production
Fermentation of each variety separately at 25°C and maceration for 20 days after alcoholic fermentation. Pressing and transfer to new French Allier oak barrels where malolactic fermentation takes place. Aged in barrel for 24 months, each variety separately. Wine design and bottling on January 26, 2008.

Tasting and pairing
A concentrated and complex nose with roasted notes enveloping ripe fruit and subtle mineral touches. On the palate, it is ample and enveloping, with good structure and hints of licorice beneath the fruit. A long and splendid finish.

Additional information
Clay-limestone soil. Hand-harvested in 15 kg crates and selected in the vineyard and winery. Production: 2,350 bottles. Collector's Wine - Wine without PDO or PGI designation. In this vintage, it was not yet permitted to produce wine with the Bullas PDO without a minimum of 60% Monastrell in the blend.
Cold winters with average precipitation, some of it snowing. Spring with mild temperatures and little rainfall. Warm, dry summers with significant temperature variations between day and night.
