Viticulture and production
Each variety is vinified separately. 25% of the fermentation takes place in open 500-liter vats, and the remainder in stainless steel tanks. Daily punch-downs and gentle pump-overs are performed. The wine is aged for 14-18 months, depending on the variety, in lightly toasted French Allier oak barrels. 20% is aged in new 300-liter barrels from different casks, and the rest in second-year 225-liter barrels. No filtration or fining is carried out. This may result in slight sediment over time.

Tasting and pairing
Elegant, subtle, and very interesting for a 2008 vintage. Deep cherry red with fine, slow-moving tears. Aromas of ripe black fruit (berries and plum). Spicy notes, hints of licorice with balsamic and minty touches, and also mineral notes. A good first impression on the palate, flavorful and exuberant. Long finish with persistent notes of ripe fruit, smoke, and minerals.

The first vintage of TOCS' second era, crafted with Mediterranean initial varieties from the Barranc de la Bruixa estate, reflects a shift in focus. Production of 5,500 bottles. Bordeaux-style bottle from the European series. Natural Flor cork, 49 x 24 mm. Cardboard box of 6 bottles. Optionally, a 6-bottle wooden box is available, PEFC certified, guaranteeing that the wood comes from ecologically and sustainably managed forests. Serving temperature: 16-18°C. Open the bottle one hour before serving and decant. Recommended glass: Syrah style.
