Viticulture and production
Separate vinification in open stainless steel tanks, destemmed but with whole berries. Malolactic fermentation in 500L first-year barrels with aging for 20 months.

Tasting and pairing
On the nose, dark fruit predominates, with notes of cocoa powder and the characteristic undergrowth of Mediterranean wines. On the palate, it is full-bodied, flavorful, and has an acidity that lends fluidity, juiciness, and persistence. It pairs excellently with cured meats, stews, rice dishes, and red meat.

Additional information
Monastrell: from the upper part of Jumilla, with sandy soils containing pebbles and limestone, at an altitude of 700 meters, surrounded by scrubland. Syrah: from the Estrecho de Marín valley, with poor sandy loam soils, at an altitude of 360 meters.
