  • Viticulture and production

    Dry-farmed, certified organic, and cultivated using integrated pest management techniques. Predominantly limestone, mostly with stony soils. Hand-harvested with field selection in 10 kg crates and 225 kg bins. Average yield of 1,600 kg/ha. Harvest date: late September (September 15-25), depending on the vintage. Winemaking on the day of harvest. 90-95% destemming. Fermentation in open 2,000-5,000 kg tanks with native yeasts for 9-10 days. Manual pump-overs 2-3 times daily. Racking and gentle pressing. Fermentation in used 300, 400, 500, and 700 liter French oak barrels for 6 weeks. Aging in the same barrels for 12 months, with 2-3 rackings. Naturally cold-stabilized. Unfined and unfiltered wine. Bottled and stored in cages for 12 months. Sealed and labeled by hand.

  • Tasting and pairing

    Medium-to-deep cherry-red in color. Complex and expressive on the nose, it presents aromas of ripe red fruit alongside spicy and mineral notes. On the palate, it is ample, flavorful, enveloping, fresh, and with a pleasant balsamic sensation. It develops fine, well-integrated tannins, resulting in a smooth and aromatic mouthfeel with a long, fruity finish. Pairs well with charcuterie and grilled or barbecued red meats.
