Viticulture and production
Organic. 14-day skin maceration, without temperature control. Three daily punch-downs during the maceration/fermentation period. Pressing of the grapes, obtaining only gently pressed fractions. Once the free-run wine is obtained, a slight correction is made to prevent malolactic fermentation, thus obtaining a wine with marked acidity. Aging in barrels for 6-8 months. Three bâtonnages per week. After the first two months of aging, two bâtonnages per day are performed.

Tasting and pairing
Golden yellow with golden highlights, clean and bright. An intense and elegant nose, with great aromatic complexity. A wide variety of aromas are present, highlighting citrus peel and stone fruit, all enveloped in pronounced nuances of nuts and light hints of bread, the result of aging in old barrels. A subtle balsamic background can be detected. On the palate, it is dry and fresh, with a crisp edge. A persistent and slightly bitter aftertaste evokes almonds and notes of bread.

Additional information
Vineyard at altitude (750-840m). Yield does not exceed 2 kg per plant. Hand-harvested ≤ 10 kg/box. Harvested at dawn.
