Viticulture and production
Organic. 10,000 L truncated conical concrete tank. Pre-maceration at 3-4°C for 24 hours in a cold room. Maceration for 18-21 days. Pump-overs with air twice a day until a density of 1020 is reached, at which point wine aeration is reduced. Three délestages between densities of 1070-1040. Alcoholic fermentation: Indigenous yeasts. Controlled temperature below 25°C.
Aged in new barrels for 16-18 months. First-year French oak barrels from Alliers. Available in 225 and 300 liter volumes. -
Tasting and pairing

A wine of great complexity, ultimately revealing a mineral nuance that reflects the soil in which these vineyards grow. Intense and powerful, with great volume, yet silky and balanced. Pleasing acidity combined with sweet, rounded tannins. Remarkable depth, where the sensation of volume floods the palate, resulting in a well-rounded mouthfeel. Prominent notes of red and black fruit are followed by intense spicy nuances. -

Vineyard at altitude (750-840m). 2 to 4 kg per plant. Manual harvesting ≤ 10 kg/box. Harvested at dawn.
