Viticulture and production
Alcoholic fermentation lasting 10 days and maceration with skins for 14 days. Automatic temperature control, with a maximum of 26 degrees Celsius. Gentle pump-overs and manual punch-downs, adjusted to the needs of each day. Malolactic fermentation in tanks. Aging took place for 18 months in American and French oak barrels, alternating between new and older barrels (no more than 6 years old). Resting in large wooden vats for a further 6 months, where natural stabilization through settling is completed. Once this is finished, it begins its aging in the bottle.

Tasting and pairing
Attractive, deep cherry-red color with violet reflections, youthful. Very fruity on the nose, with licorice and red and black fruits complemented by a restrained and elegant oak. Unctuous on the palate, with sweet tannins and a very interesting slight astringency. Harmonious and long. Perfect to enjoy now, although it will continue to improve with bottle aging.

Additional information
This wine comes from 3.52 hectares of our own vineyard located near Sajazarra on the southern slopes of the Obarenes Mountains, facing north-south. The soil is clay-limestone. The vines are trained on trellises with a planting density of 3,200 vines per hectare and are dry-farmed. The vineyards are cultivated using integrated production methods, without the use of herbicides, chemical fertilizers, or systemic pesticides, achieving ideal ripeness of the grapes and their skins, as well as maximum respect for the environment. Extensive green management practices are carried out, such as shoot thinning (removing new buds), bud removal (removing shoots from buds older than one year), leaf removal, and grape thinning, always seeking maximum exposure to wind and sun, improving the microclimate at the cluster level, and adjusting production to meet the required quality standards. Harvested in 20 kg boxes and with manual selection on a table, to achieve the highest quality.
