Viticulture and production
After a 24-hour maceration, fermentation begins with native yeasts from a starter culture prepared 5 days prior to harvest. The fermentation is maintained at a controlled temperature of 15°C in stainless steel tanks. During the first racking of the lees, the wine is transferred to 54L glass demijohns, where it ages for 8 months before being racked again for bottling. It undergoes light filtration and has a low sulfite level.

Tasting and pairing
Visually, it is very clear, bright, and with the typical green reflections of Muscat. On the nose, it is a Muscat full of rose powder, jasmine, and chamomile. On the palate, it is completely dry, fresh, and citrusy, with fleshy petals and a long finish of chamomile, dried apricots, and white pepper.

Additional information
L'Alquería del Colomer is the most calcareous Muscat of Alexandria plot in Les Freses, the most irregular, and the one that demands the most meticulous selection. If it's easy, it's not fun. It may have sediment, its filtration is gentle, and its sulfite level is low. 100% Muscat of Alexandria, Blanqueta or Cristal variety, grown in limestone soils at sea level. Our 8.5-hectare vineyard is planted in a double Guyot trellis system and has an average yield of 3,800 kg/ha. The harvest is done by hand, in 15 kg crates, with sorting and destemming.
