Viticulture and production
Organic. Cubic concrete tanks of 10,000-15,000-20,000 liters. Pre-fermentation maceration for approximately 14-18 days. Pump-overs with air twice a day until a density of 1020 is reached, at which point aeration is reduced. Three rackings between densities of 1070-1040. Final blending of the different varieties that make up the wine. Alcoholic fermentation: Indigenous yeasts.
Controlled temperature less than 25oC. -
Tasting and pairing
Deep cherry red with a cherry-red rim and some violet reflections. Medium intensity, generous tears, and a clean, bright appearance. Intense and fresh aroma, in which the following stand out:
Primarily fresh red fruit. In addition to aromas of cherry, blueberry, and blackberry, we highlight roasted nuances resulting from brief oak aging. The palate is smooth and fresh on the attack. The mid-palate is ample, showcasing good acidity and tannins. It is moderately intense but well-balanced. The finish is medium, and the aftertaste brings back those fruity and toasty notes, inviting another sip. -
Additional information
Vineyard at high altitude (750-840m). Yield does not exceed 2-4 kg per plant. Mechanized harvest. Harvest at dawn.
