Viticulture and production
Harvest: 100% hand-picked in 17 kg crates, with processing taking no more than 4 hours. Winemaking: The grapes are received in a cool warehouse. Direct pressing is performed, followed by a brief 4-hour maceration in the press. The must then undergoes static cold settling. Spontaneous alcoholic fermentation occurs at 16°C. The fine lees are worked during aging for approximately 8 months with bâtonnage three times a week. Finally, the wine is racked and left unfiltered until just before bottling, at which point it is filtered and stabilized.

Tasting and pairing
Clean, straw-yellow, and bright. The nose is long, with medium intensity, where stone fruit and citrus notes predominate. On the palate: Round, with balanced acidity, resulting in a long, full-bodied wine with depth and texture. A long-lasting wine with excellent projection thanks to the complex notes acquired during its production. This wine is ideal as an accompaniment to appetizers, rice dishes, fish and seafood, and even white meats, as well as fresh cheese, cold cuts, sushi, tataki, eggplant, and asparagus.
