Viticulture and production
Dry-farmed, certified organic, and cultivated using integrated pest management techniques. Predominantly limestone, with red marl and gypsum. Hand-harvested with field selection in 10 kg crates. Average yield of 1,600 kg/ha. Harvest date: mid-September. Always early in the morning to take advantage of the cooler temperatures. Winemaking on the same day as the harvest. 100% destemmed. Direct pressing and artificial fermentation in open 600 kg stainless steel tanks with native yeasts for 12-14 days. Settling and aging in 400-700 liter French oak barrels, previously used for 4 months. Naturally cold-stabilized. Unfined and unfiltered wine. Bottled and labeled by hand.

Tasting and pairing
Onion skin in color, velvety, with pinkish hues. The nose is fresh and very persistent, with subtle floral notes. On the palate, it is fresh and crisp, with volume and complexity imparted by the Monastrell variety. Pairs well with fish prepared in various ways, tartares, grilled dishes, and oven-baked dishes.
