Viticulture and production
100% Muscat of Alexandria, Blanqueta variety, from a late harvest, almost a month and a half after the dry wines. We left the grapes to raisin on the vine and prayed to Bacchus for minimal rain in September. We harvested at 15°C. After a 7-day maceration, fermentation began spontaneously with native yeasts and a starter culture added 5 days prior to harvest. Fermentation was maintained at a controlled temperature of 15°C in stainless steel tanks. During the first racking of the gross lees, the wine was transferred to 54L glass demijohns, where it aged for 5 months before being racked again for bottling. It underwent light filtration and was bottled with a low sulfite level. We added 1% distillate alcohol from the macerated skins to halt fermentation and retain the sugar in the wine.

Tasting and pairing
Deep golden color, like honey. Aromas of raisins, almonds, and hay. On the palate, it's enveloping, and despite its sweetness, it maintains a refreshing quality thanks to its high acidity. It embraces and warms us. A delicious pairing with blue and spicy cheeses like Stilton or Cabrales.
