Viticulture and production
Obtaining the free-run juice, settling. Fermentation in 500-liter barrels, where it ages for 11 months on its fine lees. Batonnage every 3-4 days.

Tasting and pairing
Pale straw yellow in color. Complex nose: ripe citrus fruit, light aniseed,
Reminiscent of dill and toast, with a floral background. On the palate, it has balsamic notes, is flavorful and long, with a fresh citrus touch at the end. Limited production for a white wine that expresses more than just fruit. We recommend Caudalia with grilled turbot, braised beef cheeks, and grilled fish. -
Additional information
The grapes come from a plot planted in Elvillar de Álava in 2012, at an altitude of 680 meters above sea level.
