Viticulture and production
Organic. 10,000 L truncated conical concrete tank. Pre-maceration at 3-4°C for 24 hours in a cold room. Maceration for approximately 18-21 days. Pump-overs with air twice daily until a density of 1020 is reached, at which point wine aeration is reduced. Three délestages between densities of 1070-1040. Alcoholic fermentation: Indigenous yeasts. Controlled temperature below 25°C. Aging in 5,000 L oval foudres for approximately 10 months.

Tasting and pairing
Deep cherry red with cherry-red highlights. Medium-bodied, with generous tears and a clean, bright appearance. An elegant nose of medium intensity. Red fruit aromas predominate, followed by roasted notes characteristic of aging in oak foudres. A subtle balsamic nuance adds freshness to the overall impression. On the palate, it is intense and elegant, smooth on the attack yet well-balanced. The tannins are soft and polished, which, together with the balanced acidity, create a rounded mouthfeel. The finish is long and recalls the roasted and balsamic notes.

Vineyard at altitude (750-840m). Between 2 and 4 kg per plant. Hand-harvested ≤ 10 kg/box. Harvested at dawn.
