Viticulture and production
Dry-farmed, certified organic, and cultivated using integrated pest management techniques. Predominantly clay soil with marl and remnants of ancient sandstone beaches. Hand-harvested with field selection in 10-12 kg crates and 250 kg bins. Average yield of 1,600 kg/ha. Harvest date: early September. Winemaking on the same day as the harvest. 90-95% destemming. Fermentation in open 3,000-5,000 kg tanks with native yeasts for 9-10 days. Manual pump-overs twice daily. Racking and gentle pressing. Fermentation in used 500 and 700 liter French oak barrels (40%) and stainless steel tanks (60%) for 6 weeks. Aging in the same barrels and stainless steel tanks for 5 months. Naturally cold-stabilized. Unfined and unfiltered wine. Bottled and labeled by hand.

Tasting and pairing
Alcaraván, an aromatic and elegant red wine, boasts a vibrant, deep cherry-violet color with aromas of red fruit, flowers, and spices. On the palate, it is light and refreshing, well-balanced, and with velvety tannins. Pairs well with vegetables and white meats, dry rice dishes, and pasta.
