Viticulture and production
From NATURAL FARMING. Airén variety, 70 years old. Harvest year 2015. Brut sparkling wine, based on residual sugars (between 6 and 15 g/L). Traditional winemaking method. Only free-run juice is used. Aged for over 52 months on its lees…Gran Reserva.

75cl bottle of sparkling wine with a natural cork stopper and two washers. This is quite possibly the most natural wine on the market. It comes from the utmost respect for the ENVIRONMENT (NATURAL FARMING) as a way of claiming excellence in wine through the wisest oenology… MOTHER NATURE. The vineyard, where the wine is truly made, is 75 years old and has not received any treatment for over 33 years… not even fertilizer. It is, however, lovingly tended with meticulous handwork, interacting with the vineyard with the best intentions: clearing, green pruning, digging around each vine, all by hand and, of course, without any mechanical tillage. Selective, hand-harvesting takes place at night to ensure greater freshness of the grapes and a slower fermentation. At LAGAR QUIXOTE, our facilities are immaculate so that when the grapes arrive at dawn, everything is ready, allowing us to crush the grapes and use only the best free-run juice (mosto flor). At the winery, we don't add or filter anything; we try not to interfere with the natural yeasts. The must is then placed in stainless steel tanks to begin fermentation, and before fermentation is complete, it is bottled with a stainless steel cap. This process took place before the end of 2015, and the 314 bottles remained on their lees for over four years, making it a Gran Reserva. Afterward, the bottles are disgorged and the corks are sealed. Inside the wire cage that holds the cork, there is a plaque with the winery's logo and the phrase "4th centenary of the death" (referring to the death of Cervantes). These years, spent silently in the dark cellars of Lagar Quixote, have given the wine exceptional and complex aromas and flavors that evolve upon uncorking the bottle and reveal their full splendor as time passes in the glass. It is surely the most natural and exceptional wine on the market, thanks to the natural environment that bestows it upon us, which we have inherited from our parents and which we have a duty to pass on to our children in the best possible condition. We hope that it embodies the best intentions of offering an exceptional wine in complete harmony with the environment. Because it contains nothing added and is so natural, it is a wine that is better suited to people with migraines or other health problems.
