Viticulture and production
It has macerated for one week with 10% whole-cluster grapes and has been aged for nine months in 400-liter vitrified amphorae. It has only been racked twice and is not filtered before bottling. Alcoholic fermentation takes place in stainless steel tanks, and aging and malolactic fermentation occur in 400-liter vitrified amphorae buried in albero soil, maintaining the absence of oxygen throughout its maturation.

Tasting and pairing
It's a light grape in terms of alcohol and color, reminiscent of the Gamay variety. Full of aromas of sour cherry and blood orange. Very creamy on the palate, fresh and pleasant with its hints of dairy and red fruit.

The pursuit of high yields and resistance to phylloxera led Valencians to abandon the endemic Forcallà variety 100 years ago, giving way to foreign varieties. Our winery's philosophy prioritizes rediscovering local varieties to restore their dignity. Xiulit is 100% Forcallà, grown in limestone soils. Energy: 78 kcal/100 ml. Total carbohydrates: 1 g/100 ml.
